With reverence and responsibility to our home planet, at Natural History Brewing Collective we explore the nooks and crannies of nature where flavor is hidden. Our drinks include only real ingredients and are always low in alcohol because plant-based beer and moderation are rad.

Keep it Real

We are a small team of brewers, foragers, and creatives producing the types of beverages we want to see in the world. Only real ingredients are used in our beverages - no extracts, flavors, or additives, ever - because nature gives us everything we need.​

With a combined fourteen years of beverage production experience and a certified forager on staff, we are a trusted source for quality drinks and safe, environmentally responsible ingredient sourcing. We're even trying our hand at farming utilizing only organic practices. Our food system is broken and we'd like to try to fix it.

​

We are currently a mobile operation - meaning we have no brick and mortar but rely on excess capacity at existing breweries to produce our beverages. You can find us at various events and markets in the St. Louis, MO area. We are also available to cater your private events with our unique lineup of botanical beers and non-alcoholic beverages.

YELLOWTOPS

Czech Style Pilsner with Foraged Dandelion Flowers +

Orange Blossom Honey

Yellowtops is brewed with an heirloom variety of grain that was rescued from near extinction. Fresh dandelion flowers were foraged from Earthdance Organic Farms in Ferguson, MO to lend their unique character to this double-decocted lager.

Lemongrass and Lemon Balm.png

SHIMMER

Saison with Lemongrass and  Organic Lemon Balm

Shimmer is a spritely belgian-saison brewed with fresh lemongrass from Black Rat Farms in Hillsboro, MO and Fresh Lemon Balm from Earthdance Organic Farms in Ferguson, MO. A drizzle of Chilean Tiaca Honey adds a faint sweetness and cotton candy like aromatics.​

FLORESCE

Farmhouse Ale with Organic Elderflowers

Floresce is brewed with fresh elderflowers from Earthdance Organic Farms in Ferguson, MO. The flowers were hand harvested moments before being added to the whirlpool to lend the distinct aromatics. A blend of our house IPA and Saison yeasts adds additional fruity complexity.​

SAUNTER

Helles Lager with Organic Silver Needle White Tea

Saunter is simple in design yet nuanced in flavor. Time, Tea, and Lager yeast are what make this beer special. Lagered for three months to clarify and get the flavor just where we want it, Saunter is proof that sometimes slow is the way to go.​

THE LITTLES

India Pale Ale with Foraged Fir Tips and Oregon Sea Salt

The Littles is brewed in honor of my cousin who passed by suicide. It's an attempt to encapsulate some of our life's moments together in beer form. Proceeds from this beer are donated to The Trevor Project to support suicide prevention in LGBTQ+ youth. This hazy IPA is all the best parts of a walk in the forest.​

TANZANILLA

Sparkling Honey Beverage with Light Tanzanian Miombo Honey and Tanzanian Vanilla Bean

Honey. Vanilla Bean.  Reverse osmosis water. That's it. A one-of-a-kind expression of Tanzania with only the realest of ingredients.​
